how to make cheddar bacon cornbread muffins

This is basically a hybridization of two recipes from Jean Paré's Company's Coming series cookbook: Muffins & More. The two recipes being used are "Cheddar and Bacon Muffins" and "Corn Muffins". Here's the combined recipe:

1 1/4 cups all-purpose flour
1 cup corn meal
1/4 cup granulated sugar
4 tsp. baking powder
1/2 tsp. salt
1/2 cup grated sharp cheddar cheese
4-5 bacon slices, cooked and crumbled

1 egg, slightly beaten
1 cup milk
1/4 cup cooking oil

1. Cook the bacon, but don't overdo it. Preferably on the chewier side than crunchy. Crumble the bacon into bite-size pieces.

2. In a large bowl, add the flour, corn meal, granulated sugar, baking powder, salt, cheese, and bacon. Stir thoroughly. Make a well in the center.

3. In a small bowl, slightly beat the egg. Then add and mix the milk and cooking oil. Pour into the well in the large bowl. Stir only enough to moisten the mixture. Batter will be lumpy.

4. Fill muffin pan hollows (or greased muffin cups) 3/4 full. Bake in 400°F (200°C) oven for 20-25 minutes. Let it stand for 5 minutes. Remove from the pan. Makes about 12 muffins.
