Skip Beat- Personally one of my favorites.About a girl trying to be an actress it's full of comedy and romance. Her boyfriend she was basically giving her life to becomes a famous musician and ditches her so she tries to get famous for revenge.

Nana- Goes with the trying to become musician theme. A little more mature in terms of romance I guess you could say. About two girls with the same name meeting randomly and then deciding to rent an appartment together. Complete opposites

Bloody/Action: Black Lagoon (All Season), Blood+, Blood-C, Hellsing, Baccano!, Gungrave.
Comedy: Angel Beat!, Ouran High School Host Club, Gintama, Full Metal Panic, Getbackers, Special A, xXxHoliC.
Fantasy: Yumeiro Pâtissière (There is sweet fairy so I'm not sure if it is fantasy or not.
There should be more, but I can't really think them all right now. Your choice of genre is rather difficult to find especially Fantasy. There are definitely more Comedy and Bloody anime series, but these are the one I recommend.
