Oddly enough I really dig The Last of Us's soundtrack. I hated it at first but it grew on me after a few replays.
Streets of Rage also has always had really great music, as does the entire Bioshock series and of course no list is complete without the obligatory FF7/8.

Absolutely.

Adding Katamari Damacy, Shadow of the Colossus, the Fallout series and Burnout 3 to what's been said so far. Also, the Riven soundtrack is incredibly immersive.

Fallout 1 has always stood out to me with its soundtrack. Fallout 2 mainly took the music from Fallout 1 with a few extra additions like My Chrysalis Highwayman, but Fallout 1's OST captured every place exceptionally well. My personal favorite is City of the Dead (Necropolis)
