It would be really difficult for me to enjoy life with that much time, but I would try to keep it interesting as much as I can. Very doubtful since I personally have high standards (I currently find life uninteresting for the most part)

I would start a legal business where I would lovingly kill anyone who doesn't want to live that long, thus profiting from their choice.

Then I would make a lasagna.

Master everything that is possible to master. Advance human knowledge. Start a country or colony somewhere. Work on creating a fully automated society in which money is outmoded, science is valued, and leadership is based on intelligence. Work on nature conservation and preservation. Work on museum and library building and education. Work on creating artificial self-contained habitats and, when that is successful, work on creating self-sufficient space travelling-capable space stations.

I would probably start a health food company. If human life potential is going to be 1000. people are going to be demanding better foods. No way they could live that long eating like they do now.

Spend every waking hour fearing for humanity as the population grows uncontrollably large to the point where we couldn't even consider feeding less than a tenth of the population.
