Why is that I've heard most people refer to playing with 3 fingers on one hand as some way to gain attention?

Yes I might get flamed or something to of that nature for going on but I think I have to.

I play with 3 fingers. To me playing the game with 3 fingers is where the real skill comes in the game. Yes it's harder, and some people don't like playing the game like that because it's a lot more of a challenge. But what fun is it to play a song with two hands that you easily play with 1.

Take for example a song like Moonbeam, I'm sure a lot of people play that song with 2 hands. Yes you'd get a higher score, but who cares if you have a higher score than someone, your still better if you can play the song with less manuverability. Playing moonbeam's streams with 1 hand is one of those simple pleasures in life, where you can see the arrows and play them as if your playing most of the song on an instrument.

I just don't understand why some people think a guy who plays with 3 hands is only looking to be recognized as a good player or something, to me it's where the real fun of the game is.

This is actually a REALLY old debate and it was decided back then that one handers would compete with one handers and index with index and four finger with four finger and never the twain shall meet.

IMO you can play however you want. Never was there a set way to play. But if you say that you are better than someone because you both can FC a song but you can do it with one hand while the other person does it spread you'll end up being the dumbass.
