Everyone has specifics, my favorite and main is Alistar. My 2nd would be Leona. Shen is good, I'm not quite sure who is the easiest to learn or easiest to play is, but if you want to tank you have to know your role, that is Key.

Singed is generally hilariously fun, but he'll get harder to be effective with when you start doing ranked. Blitzcrank is always insanely fun, and usually strong, but he's pretty overused lately. Taric is fabulous, and usually is my go-to tank. Cho'Gath Is pretty easy to pick up and is great at shutting down casters, and his ult can help take out problem enemies fast. Galio would be my go-to tank if I ever bought him, his ult is devastating and he utterly shuts down most ap mids if you decide to play him there. Maokai is generally a pretty fun tank to play. Short range low duration wards, a snare, and a small knockback make him pretty decent. His ult is pretty ignorable most of the time, unfortunately, as most enemies are smart enough to take the fight out of it. Nautilus has absurd amounts of sticking power and cc, he's a great tank and a great jungler, would definitely recommend. Rammus has been hit by the nerf bat pretty hard, but is still semi-usable. His taunt can pretty much make it gg if you can land it every time. I've heard Sejuani is completely useless, but I've never played her. Shen is pretty strong, but I've had difficulties picking him up, so i can't give you a whole lot of information on him.
Then there are a few tanky dps that can fulfill the role semi-decently. Hecarim works pretty well for it, as he only really needs a triforce to do decent damage and can cause quite a bit of disruption. Skarner can tank pretty well, and his ult is a great initiation/shut down. Nasus can generally be pretty tanky and can shut down a ranged AD pretty hard, but he has no method for peeling really so it's shaky. And so on down the list.

Edit: Forgot Alistar. He's great at cc but he always felt insanely squish to me. If I failed to get that early game snowball rolling I'd have a really hard time coming back from it.
Also generally your role as a tank is going to be to initiate, disrupt, and peel for your carry. If you go bot lane support you're going to have to balance your item building with your warding. You're going to have to understand how to build fluidly to match the enemy team, and know when it's a good time to start a fight. For instance, when playing singed you can toss on your ult and dive, flipping out the carry and dropping an EXTREMELY inconvenient slow for the enemy team. Most people will see your giant purple cloud and go to hit you. This is okay. If you were, however, playing Taric, generally you aren't going to want to run in guns a-blazing. Wait for someone to stick their toe over that line, stun them, and watch your team mercilessly devour them. You'll be soaking the majority of the damage, so if you die it's okay, so long as your team comes out the winning party. If you are part of the survivng group you CAN tank towers without a creep wave there, depending on how late the match is. Don't be afraid to push without a wave.
Shen is probably the most OP tank in the game. He starts off slow as a jungler since he really only has q and auto attacks, but at top he's devastating and has so much sustain. His ult is global and can either save your life or your teammates. He has a taunt that's also a dash so it can affect multiple enemies and can even be used to jump over walls. If you can taunt the enemy carries in a team fight it's pretty much gg.

You're heal (E) is pretty potent so use it whenever you can.
I usually grab Exhaust Flash, but anything could work to your liking.
This is my own build for AP/Tank Alistar but everyone has preferences.
1st item: CD Boots
2nd item: Catalyst -> RoA
3rd item: Frozen Heart
4th item: Game usually doesn't last that long BUT Sunfire Cape
5th item: Reverie (This can be made early, like before RoA, but you have a Catalyst)
6th item: FoN, Warmogs, Thornmail (Whatever needed)
~+16 AP, 3.2MP5, and AD @ 18 runes and quints.

You wont survive in bot lane with those runes/masteries early, I guarantee that.
