Pump it up is a lot of fun! It has a lot of trippy visuals and it gets your body moving. If only I had friends and a local machine... Doubles is really something else. The 10 panels are positioned to condone more fluid 'dance' like motions. Some of the charts are really wonky, but I think that's part of the charm.
I wanna say IIDX is my favorite hand rhythm game overall. I could never pass anything over a 10 when my controller worked, but that's part of what I enjoyed about it. It took a long time to pass even the easier levels. IIDX has three big factors as to why I enjoy it: its longevitiy as an ongoing game, its unique controller, and the menacing rain of blue and white bars. It's also enjoyable watching someone else tap the light up keys at lightning speed.
It's hard to say for me since I've been getting into a few recently.
ITG is probably my favorite right now, mostly because I finally have my own home access to it. ReRave is really fun to get into but I hit a point where it's just a matter of improving my scores little by little, not to mention there hasn't been a new song pack in months due to ReRave Plus being worked on so I haven't played that in a while. Reflec beat+, SM (obviously), and Jukebeat are fun as well. I really want to learn BMS, but 7 key seems too much for me right now, haha. I'll stick to 6key until I feel ready.

From my very limited rhythm game experience, I would have to go with a tie between FFR and Stepmania. I enjoy both immensely, though I'm just starting out.
