Kill shadowpriest first, then holy priest, then prot paladin/mswarrior third keep one of these shackled. Use pally fear on your second kill target and kill it after the spriest is dead. If your priest is a shadow priest you can try to keep one shackled through the entire duration of the moroes fight. If he's holy then he'll have no hit and it'll break and you have a dead priest.

Healing through garrotes isn't too hard, just make sure everyone has a healthstone, and make sure to call out garrotes for the sake of your healers. Keep two tanks on Moroes for the gouge, and make sure the tanks are quick on the pickup after the vanish. You say your healer got gouged, hopefully you have more than one. If you're just struggling to get past moroes then you probably don't have the gear to 2 heal it. I'd say bring three healers.
