I second Gunslinger Girl. Definitely sounds like the kind of series you're looking for. It's not about the action, it's about the concept of girls with horrible pasts being wiped clean and given new lives as assassins.

It's hard to think of series that make you have to reflect on it after reading, but then again I rarely do that. I'll also have to second Elfen Lied, simply for it being another drama-over-action series. Fruits Basket will also require a seconding, simply because it deals heavily into loneliness and belonging. You may wanna also get Yotsuba&!, if only to balance things out (you need a good dose of light-hearted comedy in your manga diet).

If you like delightfully twisted though, I've been reading Kodomo no Jikan (unliscenced in America because of soccer-mom pressure) and Yubisaki Milk Tea. The former is about an attention-seeking third-grader constantly making sexual advances on her teacher. The latter is a love triangle between a straight crossdresser, his next-door neighbour (two years his junior), and a classmate (who is a genius glasses girl, his neighbour's tutor, and pretty much starts off as a cold-hearted *****).

Of course, you just started Eva and OP, so those might drain your wallet for a while.
