hi19hi19's Delicious Noodle Recipe
Anyone who has been in the Team Blaze Skype chat or messaged me on AIM around dinnertime knows that I talk about my noodle recipe constantly. I've been iterating on this recipe for weeks and I've finally got it down to just how I like it, so it's time to share the goodness with you guys! Ingredient List (with notes) Egg Noodles - Sesame Oil - Kecap Manis / Sweet Soy Sauce - Oyster Sauce - Tahini / Sesame Paste - Peanut Butter - Fish Sauce - Hot Sauce - Cream Sherry - Garlic Salt - Brown Sugar - Sesame Seeds - Chives - Cooking Instructions Use a pan large enough to accommodate all the noodles Add enough sesame oil to thinly cover the bottom of the pan Use the smallest burner and very low heat Stirring slowly, add the following: (we start with the thicker ingredients first) 1 tablespoon sweet soy sauce 1 tablespoon oyster sauce 2 teaspoons tahini 1/3 cup peanut butter 1 tablespoon fish sauce small splash of cream sherry a dash of garlic salt hot sauce to taste (1 tablespoon Sriracha gives a very light, flavorful burn) 1/4 cup brown sugar Stir the ingredients until evenly mixed. This should only take about a minute. You will know when the ingredients are properly mixed when the sauce assumes an even brown color. When all the ingredients are well mixed, turn off the heat. Gently wash 16oz egg noodles in a strainer, then add to the sauce. Stir the sauce into the noodles until the noodles are evenly coated. Pour the noodles into a serving dish and garnish with sesame seeds & chopped chives. Serves: 2 people looking for light fare / 1 hungry person Serve warm or cool, tastes great either way! This recipe can be easily doubled or more to suit however many people you want to serve, just remember to use a pan big enough to hold all the noodles. This stuff goes really well with Thai tea, by the way. Please post if you make this for yourselves, I really want to know what other people think of the recipe. Enjoy!

Re: hi19hi19's Delicious Noodle Recipe
Yeah, sadly it's not the kind of thing you will be able to make in a college dorm room.
Though if you have an apartment or your own house, and have access to an Asian grocer... I could live off this stuff

Re: hi19hi19's Delicious Noodle Recipe
I'm lucky that I live in an area with lots of ethnic grocery stores. I get mine from a Greek grocer.
Some health food stores such as Whole Foods will sell it as "sesame butter" which I think is the same thing (I haven't tried it though) You can always order online too. That said, I found a brand of sesame paste at my local Stop 'n' Shop, and it was pretty good too! So check around to see, many western supermarkets are starting to stock more of these ingredients. Sriracha, for example, has become hugely popular with many celebrity chefs. Because of its exposure on Food Network programs and other places, I can find Sriracha in any supermarket I go to these days.

I guess I'll just drive around the city I live in then because I see some foreign grocery stores every once and a while. If I can't find any I guess I'll just order some online because I want to make this really bad.

Re: hi19hi19's Delicious Noodle Recipe
I think the steps are clear and simple enough to not need pictures for additional clarification. I mean it's simply:
1) Mix ingredients in pan to make sauce 2) Rinse noodles 3) Add noodles 4) Stir 5) Serve Although, I do admit, a picture of how the sauce should look like before adding the noodles would be helpful. I have the worst sense of judgement and have no clue what "an even brown color" is supposed to look like >.< |

Re: hi19hi19's Delicious Noodle Recipe
This is how I prepare sauce when I eat noodles.
1. Add whole stick of butter into a pot 2. Add salt 3. Add creamer 4. Add more cholesterol 5. Add sugar 6. Basil/Parsley/Cilantro etc... mmmmmmmmmmMMMmMmmMmmm That looks really good though hi19 I shall make it after school manana. |

But I find that the tahini and sweet soy I use in my recipe helps the sauce stick to the noodles a lot better than a traditional Western sauce base. Butter-based sauces wind up feeling too soupy for me usually.
