I think The Paper from Read or Die is pretty creative..

She is the master of Paper, and carries around a suitcase of just plain paper... Can turn it hard as steel, makes a parachute, paper airplane to chase after someone.. shields... etc..

Yeah, The Paper is pretty clever. So are the guitars from FLCL.

The Lance of Longius from Evangelion for the fact that it is indestructible and can peirce anything.

The Lance of Longinus. A creative weapon from a creative anime. From the second Eva game is the Mastema. It is a short and long range weapon. It is a knife a gun and an N2 missle launcher. No it is not from my sick and twisted head. I twas in Newtype.

                      Servbots.

But I don't think they are in an anime. Damn.

                      Well, Megaman Legends is anime-based.

Hah! The classic paper fan. Gotta love them.

The Beast from X/1999 is pretty badass if you choose to neglect its jealous side, I consider it a weapon because Satsuki commands it.
