You don't cook bread, you bake bread. I've tried a couple times to bake gf bread, I hated doing it and they sucked. There's a billion different types of gf bread that can be bought, and each different brand is quite distinct from the others. But they are NOT the same as regular bread. There are some good proximilies, (Udi's hot dog buns are pretty damned good) but I seem to react to all of them by getting a rash or getting nerve pain. Either I react to yeast, sulfites/ates from the yeast or corn starch (not all have corn starch, but I seem to react to anything with it), the flours aren't gluten free enough, or the oil in them isn't gluten free enough. I suspect the oil is to blame in most cases, I've stopped cooking with most types.
Chemically and texturally, gluten combined with yeast is what makes bread bread.
I don't really like rice much, but I eat it all the time.
