Ooh that's a tough combo. I'll have to see what I can make without those two. I'd love for you to be able to make it!
Oyster sauce will probably be easy to do without, but finding a substitute for the peanut butter will be difficult. Are you allergic to tree nuts, or nuts such as almonds? If not, I can try soy butter or apple butter for you and see how it works with the noodles. As long as you're not allergic to sesame (kind of a deal-breaker in this recipe) I bet I can make something for you to try. Experimenting is fun.

Yeah like I said I found some at a Stop n Shop and it was pretty good quality too. There's also a few brands of it at Whole Foods.

Yay someone wound up making it! So glad you are enjoying it.
If it's too light all I can think of is that it might need more oyster sauce or sweet soy. That, or you are using a lower quality of sweet soy sauce- the higher the quality, the darker and thicker it is.
Either way if it's tasting good don't worry too much about getting it to exactly match my pictures. Now that you have the basic proportions right, tinker with the recipe a tiny bit each time until it suits your taste. That's the really fun part!
