Being a romance fan (oddly enough), I tend to gravitate towards romance themed anime more often than not.

Some of my favourites are:

Ai Yori Aoishi
Onegai Teacher
Onegai Twins (okay)
DearS
Inuyasha

I also like other animes too. Non romance ones that is. One of my favourite animes ever has to be:

X (also called X/1999, X tv) NOT the movie though, only the series.

Princess Mononoke (honourable mention)
Spirited Away (honourable mention)
