Usually the giant bag mods have options to automatically sort items by quality/type. Like Gray items go here, reagents here, etc.

I run my backpack with my potions/buff food etc, my 5th bag with my mining/JC stuff, and then as I loot, I just let trash pile up in bag 2/3 and put anything I intend on keeping into 4. It takes no real time at all, but since most people are astonished that I "leave town" with only my backpack actually full of stuff, I suppose I can see why people whose necessities take up more than one bag might like it.

Also, I have an addon that lets me one-click-sell all my greys, and another that puts a coloured box around items based on quality, so it's pretty difficult for me to ever accidentally sell something I want to keep.
