Wow. Looks really gourmet.

I'd love to try making this but I have a feeling I'd get extremely frustrated trying to find all the ingredients. Especially since I have neither a car nor a bike so I'd have to walk everywhere. Unless by some miracle my local target has everything.

That looks so gooood!! I saw this an immediately wanted to try it. <3 But, is there a way to do it without peanut butter and oyster sauce? I'm allergic to both.

You can get usually get tahini at any run of the mill chain grocery store. Check the organic section/gluten free section/allergy section.

My sauce ended up a lot lighter than yours did but it still came out really well. Sorry I don't have any pictures... I lost my camera when I was in Universal Studios when I took a trip down to Florida. I love you though, this stuff's amazing. <3

Ooh that's a tough combo. I'll have to see what I can make without those two. I'd love for you to be able to make it!
Oyster sauce will probably be easy to do without, but finding a substitute for the peanut butter will be difficult. Are you allergic to tree nuts, or nuts such as almonds? If not, I can try soy butter or apple butter for you and see how it works with the noodles. As long as you're not allergic to sesame (kind of a deal-breaker in this recipe) I bet I can make something for you to try. Experimenting is fun.

Yeah like I said I found some at a Stop n Shop and it was pretty good quality too. There's also a few brands of it at Whole Foods.

Yay someone wound up making it! So glad you are enjoying it.
If it's too light all I can think of is that it might need more oyster sauce or sweet soy. That, or you are using a lower quality of sweet soy sauce- the higher the quality, the darker and thicker it is.
Either way if it's tasting good don't worry too much about getting it to exactly match my pictures. Now that you have the basic proportions right, tinker with the recipe a tiny bit each time until it suits your taste. That's the really fun part!

I'm going to try to not be real wasteful of ingredients but at some point for the **** of it I'm going to replace peanut butter with Nutella. Also, I'm pretty sure it's just my soy sauce because I'm using some really weird Wal-Mart brand.

Nutella is just hazelnut butter with a hint of cocoa, could work honestly haha
I was actually going to suggest hazelnut or almond butter to Cammy if he is not allergic to those nuts. Not sure about the cocoa though lol

No nutella dummy! Nutella's sweet and chocolatey. Its flavor would not work well with this at all.
Soy sauce comes in light and dark variations, color isn't so important as the taste you get from it, so if you like how your soy sauce tastes, that's what matters.

OMG I've been tampering with recipes for this exact dish for months! I once ate nothing but these noodles for 4 days straight. Definitely will try with your measurements. Nice photo btw.

I don't think the flavor would be altered too much by omitting oyster sauce completely, especially when oyster sauce seems to vary greatly in taste. You already have fish sauce for the seafood taste, and soy sauce and brown sugar and srichi. It also wouldn't be changing the texture too much to not use it since there's not a ton of it in there.
If you really want, you could try some store bought teriyaki sauce or hoisin sauce if you can eat those.
I would recommend cashew butter in lieu of peanut butter if you can eat nuts; I find they taste the most similar to peanuts of all nuts and I've used cashews instead of peanuts in thai cooking before with delicious, can't-really-tell-the-difference, results.
Note that many nut butters will probably be unhydrogenated, like a natural peanut butter, and so will be thicker and not as creamy. You may want to use a bit less nut butter and a bit more oil using them.

Yeah hoisin would substitute fine for oyster sauce, just use about half hoisin and half extra sweet soy sauce instead of the oyster sauce and you'll be fine.
The primary reason I use oyster sauce is that it has a smooth, savory taste that adds something different compared to sweet soy sauce, but it's not a big deal overall to omit it.
Also, not sure if the issue is just with shellfish, but if you can't have anchovies either (fish sauce) then substitute regular soy sauce and use extra salt. Fish sauce is extraordinarily salty so you need to make up for that.
Cashew or almond butter was my first idea for replacing peanut butter, but because Cammy said he can't eat nuts at all, I think my best bet is soy butter (soy is a bean, not a nut!)
I can also try apple butter. I've honestly never tasted it (sounds sweeter than nut butters) but a lot of cooking sites recommend it as an alternative to peanut butter so we'll see how it works.

Anyway I'm going shopping soon so I will get more noodles along with soy and apple butters and try them out when I can.

My gf got me some sriracha and I remembered this thread. I just kinda make stuff up but thanks for giving me the idea of peanut butter, garlic, sriracha to mix together. Threw some olive oil and pepper and it was pretty decent. Next time I make it I'll probably throw in some soy sauce for volume in the sauce and a little less pb.
