Vince Guaraldi is the man.
I think it's really unfair to lay all that at Snoopy's feet though. The strip really needed something new to it when the 60s rolled around and Snoopy allowed sight gags and other commentary without changing the rest of the cast. If flanderization happened it's probably more to do with Schultz's age and wanting to streamline the workload rather then Snoopy overtaking the strip. Although, Snoopy hogging the spotlight probably did lead to a bunch of the original characters disappearing (Sherman, Patty, etc) just as much as Schultz was maybe sorta kinda forgetting the cast in his later years.
