I don't recall Mirror being removed.
PIU Pro FX cabinets were produced with 42" monitors and were the same size or larger than their Korean predecessors (NX2/NXA had FX cabinet options, but NX did not and only carried a 34" monitor). NX cabinets were released prior to the FX models, so any machines with larger monitors must have had their marquees/hard drives changed out. Pump it Up Pro was the first game to use FX cabinets, which have the 42" screens -- the screens normally aren't smaller. The machines released 2011 or later (CX/TX series) have 42"/54" screens. PIU Pro was never released with a smaller CRT monitor, so if you're seeing a smaller monitor for Pro, or a larger monitor for an older game, something was changed.
As far as the PIU Pro series being abominable, that's a highly opinionated statement and both sides can argue valid points. For example: PIU Pro added a new perspective of charting by adding mines, and PIU Pro 2 added Routine Mode/Gauntlet mode, which were a bit different/new to the PIU series as a whole -- on the other hand, the "official" series brought tougher charts and more of a quest-like mode with WorldMAX, but those who have helped to complete it know how over-bearing/ridiculous it is.
I'm assessing games as a whole, but I like to nitpick at particular subjects.
EDIT: Oh, it seems like the older games do have alternative cabinet choices now -- I'm seeing some NX cabinets with the FX designs. They kept manufacturing the older games with the newer cabinet designs. I've still yet to see a TX cabinet, though.
