Zelos is the best character by a lot.

Tales of Symphonia's storyline is pretty layl, but it has good characters.

Tales of Abyss has a good storyline and better characters. I'm not sure why it doesn't get as much attention as ToS does, because it's clearly a far better game. The best Tales game of all, in fact.
